Down in Phoenix, I synced my iPad with my Dell laptop. That was fine and dandy. I loaded my music, my videos, my apps, etc, etc, etc.. I have the exact same library of stuff on my G5 desktop. Now I added 8 episodes of E.R. to the G5, so I synced with the G5 to add the 8 episodes, and it erased the iPad and re-synced everything. It takes about an hour to resync EVERYTHING, but it should have just taken a couple minutes to add the 8 episodes of E.R..
If I am syncing with another computer, does it NEED to erase and re-write EVERYTHING?

yes and no. In my opinion itunes' greatest fault is that you cannot sync with more than 1 computer (it'll keep erasing each time you switch). There is however a way around it that will let you sync on two computers. I'll go find the link.
