I currently run that system, though with a 300GB Raptor, of which I'm only using 150GB and that's with all my development stuff, some virtual machines, and a bunch of games (heck my steam folder is 50GB) which I really don't all need installed.. so I figure I could probably get by with a 120GB SSD or a 200GB one would be fine. Still too much money for 200+GB ones so I'll probably wait, but the 128GB ones are becoming more and more attractive, and I could probably install some less used software on the other drive.
As far as it being a bottlneck on the 2nd drive, in theory yes, but in practice how much time for most apps is spent actually loading the app, and how much time loading the document. It takes about 1.5 seconds to load Word on my PC, but the doc loads instantly. Photoshop takes 7 seconds to load, an image less than 1 (a small image though).
Plus unless it's movies or working with print images, most documents are quite small anyway.
