I dont find it that more greasy, because whatever surface is touching the oil, you're still getting it soaked in grease.
Breading adds texture and crispiness. It also adds more flavor because of the pepper or other spices you combine with the breading flour.
It's also about getting more tenderness in the chicken too. The breading also helps seals in the juices and getting more consistant tenderness in the meat
I'm guessing you also hate chicken nuggets, fish sticks and all that is KFC too?
