That's part of the problem. Using a coffee maker. The water isn't in contact with the grounds long enough to draw out the full flavour. Sort of like only having the tea bags in the water for 20-30 seconds.
The way I do it is I put a pot of water on the stove, let it boil, put 5 scoops of coffee in a one of those cylinder things (can't remember the name of it off the top of my head) and fill it with the water and let it sit in the grounds for 5 minutes or so, then pour through a filter and you're done.
