If you haven't played FF7 before, it really is one of the greatest games. The graphics would look really dated now, but if you value gameplay > graphics you would really enjoy it. FF9 is a fun one. It was the last one released on the PS1 (I think only 6 months maybe before the PS2 was released) and it's a throw-back to more old-school RPG elements. FF7 and 8 were more futuristic themed.

I'm assuming you would be playing these on an emulator of some sort?
