It might not be a bad idea to check out some farm auctions...lots of old guys getting out of it, and there's a bunch of old trucks that go for pretty damn cheap, especially if they aren't in perfect running order.

I'm still kicking myself for not buying a bright orange Chevy Camper Special I think...big ol' 454 in it if I'm not mistaken, perfect running order, and the basterd went for 500 bucks. I dunno what I was thinking not buying it...I was young and stupid I suppose.

Anyways, good luck with your search. Post some pics of it when you're done/in progress...I dream about doing something like that someday.
