Offence knows where they're going on every play, defence is reacting. Plus offences can rotate in fresh running backs and receivers. In order to stay fresh the defence is forced to put out inferior safety's or corners to keep up. Offensive lineman also don't have to worry about trying to go 7 yards deep on every play or have to release and chase down a ball carrier like a defensive lineman does. It's a bit like being on the PK in hockey verses being on the PP.
