I played both offense and defense in high school. I found myself significantly more exhausted after a defensive series than an offensive series. Also, in the pros (CFL/NFL, even college), you see a lot more rotation of DLineman and sometimes LBers on and off the field to keep them fresh. You don't see that at all with offenses.
I don't know why, but I think defenses end up getting gassed a lot quicker than offenses.
