If I install iTunes as a way to search for podcasts and download them into iTunes so that they're organized is there a way to put them from there onto my flash drive? Or is iTunes only for iPods as the name would imply?
Itunes would be a fine way to search and manage podcast subscriptions. The podcasts will download into the iTunes music folder, in a subfolder called, suprisingly, podcasts. From there, just copy them over to the flash drive.

The only thing you aren't going to get without an iPod, is the synchronization of played/unplayed status back and forth that would automatically remove podcasts you've listened to when you sync up.
