Green gazpacho: avocados, cucumber, cilantro, anise or fennel (use the whole bulb and stalks). Just puree it all in a blender or food processor; no cooking. Add a bit of lemon juice and salt. Mix a bowl of finely chopped chilies and maple syrup, and serve this on the side along with some sour cream, for people to mix in to suit their taste. It's a delicious and easy dish that really complements whatever you're making on the grill.
