My thoughts on Mongolia - and I didn't spend much time there, and this was about 9 years ago - was that it's one of the most gorgeous countries I've ever been to, in terms of the wide open spaces, beautiful plains and deserts, wonderful culture. Liked the food too. Ulan Bator was a bit of a dive, and is the least cosmopolitan capital city I've ever been in, but it did have a decent selection of international restaurants, everything is cheap. I did get pickpocketed there (an incident that long-time posters on the board will probably remember me posting about). If I had the opportunity (and I definitely do not right now), I'd love to go back and explore outside Ulan Bator much more, and also use it as a jumping off point to go to Lake Baikal, just across the border in Russia.
