To gain weight, no matter who you are, you will need to eat. Most people will only need to exercise 3 times a week to see solid weight gain (rest and recovery is just as important as the workout) - you will almost never only gain muscle though when gaining weight. For most people I would highly recommend Starting Strength by Mark Rippetoe (I've seen Azure advocate his book before I think)
If you are lactose intolerant, I would suggest liberal amounts of olive oil, nuts, seeds, bacon, butter, coconut oil.
If you want to minimize fat gain, try 3500 calories a day for a couple weeks and see what happens with your weight. If that does not do it - up it to 4000 calories a day...seriously - gaining weight is all about eating...it is as hard or harder than the workouts...
