Death, Dying, and Medical Ethics:
One of my favorite courses, we discussed how death has been celebrated/honored in cultures throughout history. We had multiple field trips to funeral homes, hospices, cancer centers, autopsies, etc. Very good course for someone going into the fire service like myself.
History of Presidential Assassinations:
In depth study of asassinations and attempts on U.S. Presidents and Presidential candidates. Much of the course focused on the assassins themselves and their mental/political issues. Connspiracy theories were addressed as well.
Hitler and Nazi Occupied Germany:
No tests, just reading and peer discussion on different aspects of the Holocaust and the Nazi regime in general.
As a double major in History and Fire Science, they were all options in required curriculum.
