That has always scared me a little. With drywall you are adding a certain amount of fire proofing, but hanging plywood or OSB you are now adding a bunch of fuel for a fire to consume.

One option would be to insulate it and drywall it, then stall when you get the quotes for mudding and she sees that it will cost as much as two trips for the two of you to Vegas in the winter.
