I spent 10 days in Ireland in 2002 with a friend - we started in Galway (flew into Shannon) and then ended up in Dublin - basically did a route through the south part of Ireland. Hit Killarney, Cork, Kinsale, Kilkenny all along the way to Dublin. I'd personally skip Cork but the other areas that we hit were very very nice. Did a couple bus day trips to the Cliffs of Mohr (based that one out of Galway) and the Ring of Kerry (based out of Killarney). We stayed in hostels the entire way.

If you hit Kilkenny (which if I remember is a couple hours from Dublin) - you can hit the Smithwicks factory. Kilkenny is just a really really nice small city - huge castle you can tour, churches, etc. It was a very relaxing city, unlike Dublin.
