Go to Freemont Street at night and catch the Freemont Street Experience. Its free, though you do have to shell out some cash to get there. Freemont Street in itself is something to check out. It is "Old Las Vegas".
There is the Titanic Exhibit at Luxor. Kinda neat if you like history. They also have Bodies at Luxor, another exhibit, which I'm not into, but my wife found it fascinating as it is work related. Basically it is dead bodies on display... not sure if they're real but they are realistic and you get to see human anatomy.
The Piano Bar at NYNY. You can even take it in without getting into the bar, just get some pizza from Sirrico's and sit, eat and enjoy the Piano Bar.
Go to the website of each resort and you can find a list of things that they have to offer. Some things may not take you very long, like the Lion Habitat at MGM Grand, but its something you may want to check out. They'll also have a list of shows that are taking place in their resorts and you can make a list, check it twice and decide which show would be nice to see. There is a few different Cirque Du Soleil shows, I've heard good things about O and Ka. Well I've heard good things about all but Criss Angel's Believe.
I really enjoyed Shark Reef at Mandalay Bay. That is one of my top suggestions of things to do in Las Vegas.
