Well Eurail is a pretty quick and efficient way to get around Europe. You might be best off to try something like the Chunnel train from London to Paris (not part of Eurail, probably costs around 200 Euros one way, but theres better people to answer that question than me) and than get a Eurail flex pass with like 7 days travel in a 28 day period. That is likely the quickest way around if you want to avoid flying. If you're willing to do a night train you can basically go from Amsterdam to Madrid overnight and not really lose a day of your vacation. I went 10 years ago for 2 months and had the Eurail unlimited flex pass, and it was the best money I ever spent.
