To be quite honest, it probably comes down to personal preference. I love the patio service of Towa with their modern spin on their menu. They are hands down the better joint. I've been to globefish plenty and Towa plenty. Towa is the place I go if I want to impress someone or treat myself. Globe is just a pick up place now that is opened in the Loop. Plus, the people who go there are always white when I arrive, so that fuels my bias.
Towa is good, Globefish is good, but they're completely different styles. Towa is steroid-infused cuts of fish and food that is oversized and nice looking. The fish is fresh, the menu has good variety, the rice is average. Their food and their decor is similar - it all looks like it belongs in an IKEA. And that is not a negative slight, I love IKEA.

Globefish is more japanese fusion, izakaya style sushi - straying away from sushi in the traditional sense and trying things that are different. Lounge-style japanese snacks.

Neither of these places are a good representation of what sushi SHOULD be, but Towa is closer to it.

They appeal to different preferences. I can appreciate both.
