I think in this example its more than just using a Pan Pot. It's recorded using a stereo pair of mics (or a Neumann KU-81) spaced the average distance between human ears. As the sound source moves around the mics it mimics what we normally hear in reality. A Pan Pot takes a mono signal and shifts its place in the sound field either to the left or to the right. I guess my point is that while using the pan pot function to create those recordings would work, it would take forever to dial it in that specific when you can use a stereo pair to achieve the same effect more accurately without fiddling with knobs.
