Paint your own pottery together (Clayground).
Tobaggoning, building snowman, snowfight (if you're cheap).
Dinner theatre (Dean House, Jubilations, Stage West, in addition to other mentioned above).
Go to build-a-bear in Chinook and each create a bear for the other at a set price (you pay for both bears... unless you're cheap).
If she's active, things like rock climbing lessons, boxing, etc.
Whatever you do, at the end of the night, slip a roofie in her drink and profit.

That helicopter ride is a good one, might have to steal that one some day.
