The problem with this to learn the guitar is it involves concurrent modelling (ie playing as it tells you on the screen), which actually inhibits learning.
A cool premise that will make learning guitar fun, but you're not going to be able to step back and play the song without the software after learning it with, but at least you'll learn the motions, etc, and it will definitely help with learning.
I don't think games like guitar hero will change to more realistic guitars as it takes a step away from video gaming, and I think that's where the market is.
