I went to Fiji once. The thing I remember most about it was the incredibly stark contrast between the super luxurious resorts that we stayed in as tourists and the phenomenally poor conditions of that the employees of the resort lived in outside of the resort grounds. The wealth gap between locals and tourists was very striking, and that is certainly not the only country I've been to that is really poor, but it really stuck out there. The only similar place I can think of is Siem Reap in Cambodia, except Cambodia seemed to have more of a range of accommodations.
Still, it's beautiful. Make sure you bring your bartering skills for when you go to markets.
