You may need to call Apple tech support for that. You can also try their online support site at

That's just a setting thing. You define your Default Account in the Mail, Contacts and Calendar settings. Your Default Account is the one that will come up whenever you try to initiate an email from any application. If you want to initiate an email from a different account, you'll have to physically toggle that account in the email (the way you're already doing it). If there's a certain account that you send most of your emails from, just set it as the Default Account so it always comes up.
(If you just reply to an email it will use the account that received the email you're replying to.)
