The particles may not be landing on the back of your tongue, but they are infact entering your nasal cavity. The smell receptors in your nose accept the particles of the fart and that's what makes you smell. Now, that being said, it is definately possible for some of those particles to land on the back of your tongue, being that your nasal cavity and mouthe are connected and when you inhale, not every single particle is attrached to a receptor...
