Hmm...Itunes should have some sort of "don't load at startup option" If not...

I think it's safe to just delete it. Make a copy on your desktop in case but just go ahead and delete it.

Also, instead of using Quicktime to watch video, go download Quicktime Alternative and Media Player Classic.
