From what I've heard, the key thing is that you need to consume a roughly similar volume of food while changing up the amount of calories. Otherwise, you can confuse your body into thinking that food is in short supply, in which case it'll go into a fat-collecting mode. In other words, it's counterproductive to simply skip a meal here and there, but if you are frequently replacing high-caloric meals with low ones, it'll be far more effective.
