I use my non-Rogers unlocked N95 on Fido with the $30/300MB plan and it works fine, the first gen iPhone will be no different.

I'm tempted to do this too, I just don't know if I can go so long without changing phones and limit myself to whatever Telus or Bell happen to have.

That won't work anymore, all v2 iPhones will require a contract of some sort to activate and it's done in the store; i.e. you won't be able to walk out of the store with one without having a contract done (that you'd have to then cancel). This is because the carriers are paying Apple a lot more than $199/$299 for the phones.
I think I've read that Italy's laws are such that a non-contract phone will be available (for what cost who knows), and barring that people will just pick the country with the lowest contract cancellation fee to get v2 iPhones to put on eBay, but the cost of course will be a lot higher than the $199/$299.
