I get Rye, or Cognac. My clients mostly know I don't drink wine. Those that give me wine are giving it to my wife....
Being a former cook and server at a place that didn't have a tip-out, I agree that back of house can really suck. Then when I moved to fron of house i tried to do a voluntary tip-out to the BOH on anything that wasn't a terrible night.
Now, I tip 20-25% for great service, or if I'm not paying for the meal (gift card etc.), 15% for average service, 10% if I'm disappointed and 5% or less if the server is downright rude or completely incompetent and unapologetic.
Frankly, if I get s----ty sevice I don't care if the server thinks I'm cheap.
