Everyone knows that Luke didn't chop off Vader's hand, but rather his artificial robotic replacement hand! His actual hand was chopped off decades earlier by Count Dooku.

Both.
In
The Empire Strikes Back, Vader chops off Luke's hand; in
Return of the Jedi, Luke chops off Vader's artificial hand. He then looks at his own robotic appendage and realizes that he's following the same path as his father, which is exactly what Palpatine wants.
