I seem to recall that the 'wine' referred to here, and in other places in the Bible/Book of Mormon is talking about something that is closer to what we refer to as grape juice today. It is not like pulling out a bottle of your favorite red wine and having a glass with dinner. However I do think it is certainly possible that fermentation probably occurred to some degree in any fruit juice that was stored in an era that didn't have refrigeration. I don't think this is church doctrine though.
