Adium and Skype for IM, VLC and flip4mac for videos, Transmission for torrents. That's pretty much it. I have iLife08, Appleworks 08 and Office 2008.
I have the Tips4mac widget on my dashboard. It gives daily tips and tricks, always free programs...The archive of tips is a must read for any new mac user.
