I suppose from a budget perspective it's easier to justify writting off a $25K car every time they use the "Turbo boost" as opposed to using something like a Viper which doesn't have a cheaper cousin.

Or they could do like they did in the movie, and when the police cars that were Chev Berettas blew up; they would suddenly revert into K-cars a millisecond before detonation. (Cheapest.......Special Effects.........EVER!)
