Granville Island is so much better than Eau Claire. I was in Calgary 2 years back, and was staying at the Sheraton across the street and I saw Eau Claire "Market", so I thought it would be similar to Granville Island market.......NOTHING ALIKE. Granville Island has way better restaurants, way better entertainment(check out the IMPROV there, awesome stuff) and it actually is a market. There's plenty of fresh meats, fruits, bakery and souvenir shops. All Eau Claire had in my mind was a movie theatre, a FanAttic and a food court. Granville Island and Eau Claire are apples and oranges.
As for looking for something to do in Van, all the good touristy stuff has been listed, in November, you are probably looking at rain, so some of the stuff is out, but if for some reason, its clear outside, I definitely reccomend going to Grouse Mountain, taking the gondola, and having lunch or dinner at the restaurant that overlooks downtown Vancouver and pretty much the whole Vancouver core for that matter.
Nightlife, I recommend the Roxy. Always busy, so get there early, but it's a good time. It's not classy by any stretch, but everytime I have gone there, I have had a great time. Great music, live band, no rap or hip hop. Stone Temple is crap, stay away, unless you like 16 year old skanks.
If you wanna go shopping, either Robson street or Metrotown gets my vote. Metrotown is really big now, and you can easily get lost, but there is a lot to choose from and you can totally waste a couple hours there and its easy to get to, skytrain takes you right there.
