I think 3.5 years old is a little bit young to really do anything but watch the shows at Disneyland (unless you or your wife are really keen on going to the park). If I was in your situation I would go to a nice beach area (LA, Florida etc.) and let the kid play in the sand. He will have at least as much fun and you will get to relax more.
