I agree with what you said calf, it's all about the service. The last time I ordered pizza for example, the guy was late, he didn't arrive with a smile or a "how are you?" He said nothing and was late, he was lucky to get the one dollar tip he got and then had the nerve to curse about it as he walked back to his car.
On the opposite end of the spectrum, when I was at my brother-in-law's bachelor party, we went to TGI Friday's in the Halifax Casino. The girl that served us was very nice and respectable and did a great job, especially when you consider she, a VERY attactive woman, was serving about 20 young males all close to her age. A few of whom had the nerve to drool over her and then not tip. Knowing some of my friends and how cheap they can be and based on her very prompt and polite service, I gave her a $20. Even with that, I doubt she got 10%.
