Heck the Chiefs even did that by accident when they were basically forced to replace Priest Holmes with Johnson. 90% of the time I think that actually would be a good move, only occasionally (LT or Walter Payton, or Barry Sanders would that bite you in the arse). Build a good line and most NFL teams can find a back who can rack up yardage behind that line. Let someone else pay the 28 year old guy who's got a lot of mileage on his body for the work he's done.
Shanahan hasn't paid a running back past the first contract since Terrell Davis (Broncos ring of fame, NFL HOF candidate). I think that's actually an outstanding plan...if you can make sure you have at least two guys capable of being an every down back each year and have an offensive line capable of supporting a running game.

It's worked for the Broncos. Can't say running the ball has been a problem for them for at least a dozen seasons.
