My guess is the stores cut the bread shorter so that they have to put less toppings on it. if you cut a 12" sub down by 10% to 10.8" then you save 10% on the cost of bread, meat, veggies, sauce, etc.

I was actually in Quiznos on Saturday and the guy ahead of me ordered a 12" sub. The girl got the bread out of the bin and before she could cut it, the guy said, "dont cut off the ends, just leave it whole". I didnt know what his problem was until now. Im going to do the same.
