I've never been a big fan of all-you-can-eat sushi. Typically, you only get the very basic items like tuna, prawn, salmon, california rolls, etc., and the quality is never as good. If you absolutely must go to an AYCE spot, though, then the previous suggestion of Ichiban on MacLeod is probably the best choice.
For a la carte sushi, I've been to about 20 different restaurants in Calgary and I've yet to find one that's better than Globefish (either the Kensington or Marda Loop locations -- same menu at both spots).
