I see the stands up and I've seen videos from people in the stands. You see a bunch of blurry vehicles race by over a few seconds and then nothing while they're at other parts of the track... then you wait to see it all blur by again. What am I missing?

Sitting on a straight can get boring for this very reason. It seems cool at first to experience the speed and sound but it’s so fast you end up cranking your neck back and forth for such brief action.
The best place to sit at an F1 track is where you get to see rapid deceleration and acceleration. Seeing these cars go from 300kph to 100 then back to 300 again in a matter of seconds is a sight to behold. It also allows you to see the action better because they’re going slower thru the corner than they would on the straight.
One exception might be sitting on the pit straight because watching the garages can provide interesting viewing even though the cars flying by is less appealing.
Also the braking zones are often where the most overtakes happen so not only do you get a better view but you see more action than you would on a straight.
Otherwise some of what you say is valid. After the stream of cars go by you’re watching the big screen to follow the action until they come around again. However as the race progresses this becomes less of an issue due to field spread.
Like many sports, watching from home has some definite advantages but getting up close to an F1 car and experiencing the full F1 circus in person is worthwhile at least once imo.
