You used to be able to order a Monte Cristo at Moxie's but I haven't tried to do that for awhile.

most chinese restaurants do, they have the deep fried battered sweet sauce menu for the "outsiders" and the regular menu for people who can read chinese.

catering to the people's likes / dislikes

This makes sense to me, but it always makes me wonder what I'm missing. Also, cats.

The Dairy Queen in Lethbridge does these Bacon Cheese Fries that I've only seen in Lethbridge, the DQ's up here look at me like crazy,

A couple DQ's also add hot fudge to there blizzards for a slightly different option, skor blizzard with hot fudge is awesome

it's a good thing the place is in lethbridge though considering the daily fat intake of that meal is like 5000%

What is that? Hot chocolate stuck in the freezer so it becomes a popsicle?

That's more of an acquired taste, but I do love them

There are plenty of relatively tame stuff for Westerners to try if they want some authentic Chinese. Ask for the Chinese menu to see if it has English translations.
Some items that may be worth while to try:

Chicken dishes:
- Crispy chicken with shrimp chips
- Crispy chicken with garlic and soy based sauce
- Steam/salted chicken (warning, may be served cold)

Hot Pots:
- Seafood hot pots
- Beef brisket hot pot (may contain beef tendon, yummy but some may be put off by the texture)
- Something with Tofu in it

Seafood:
- Ask about their live/fresh fish of the day, have it steamed with green onions and ginger (my favourite way to have fish)
- Try Chinese style crab or lobster. It'll be stir fried and cut up and served in your choice of sauce. Lobster goes well with the cream sauce. Crab goes well with ginger and onion, or for spicy, a spicy bake spice

Beef/Pork:
- We eat sweet and sour pork, Peking style beef short ribs as well

Veggie/Tofu:
- Ask what they have in terms of fresh vegetables of the day. Be adventurous and order a chinese vegetable. You have difference options on how they cook it: Stir fried with garlic (the easiest way), stir fried with beef, soup based...etc
- My favourite, snow pea leaves stir fried in garlic ("dow mui" for Cantonese speaking people)
- Steamed tofu with shrimp on top
- Deep fried tofu
- Chinese Mushroom or oyster mushroom dishes

It is always best to go out for authentic Chinese food with 4 or more people so you have the ability to share a few dishes.

What secret combinations of words and voodoo do you need to use to get good, tasty food at In N Out? That's a secret I'd be really interested in.

Buddist use Tofu for their vegetarian dishes. Its bland nature allows it to be a very flexible food and it takes the flavour of the medium it's cooked with. It also comes in a variety of forms (egg tofu, deep fried, hard/firm, sheets, dessert) each with its own method of cooking

The Chinese menu has a different variety for things, although they are occassionally translated into English as well for the Asians that can't read Chinese (me)
For the ultra secret items, they are written on a board or poster and not listed on the menu. That'll be equivalent to the daily specials
What are the unusual dishes on the Chinese menu? Any dog? Monkey brains?
What about insects/grubs? I regularly watch Amazing Race and everytime they go to some Far East country one of the challenges always seems to be eating some exotic food that westerners would normally never consider trying. Can you get stuff, LIKE THAT, to eat here in Calgary?
