I think you're incorrect on the jerseys. Winning teams bring sell out crowds with or without stars, for sure, but its not as simple as every fan owns one jersey and if it's not Gaudreau it's someone else.
Lots of fans in this city will become excited over the acquisition/breakout of a player and get their jersey, it's actual quite the norm, regardless of whether they already have one jersey or ten.
And it's not tied to "well, it's a new year so I'd better buy a jersey", it's typically tied to "Oh wow, love that guy I want his jersey!!". If no one is really standing out as a star most fans will stick with what they already had eg: blank/iginla/kiprusoff etc.

the Canucks simply don't have the assets that the Flames would want. It would have to be a serious impact offensive player under the age of 24. Or two very good players and a first round pick not lottery protected.

Problem is it takes two to tango. I can't see a team wanting to do something like that during the season, unless they were in need of a shake up. Hope springs eternal at the start of the year though so I can't see another team wanting to do a lateral move like that. The whole point from the other team's POV would be to upgrade their roster, not make a trade for the sake of it.
If Gaudreau did need to be traded right now, I'm 99% certain it would be for a bag of picks and prospects with a lesser roster player thrown in.

Agreed. I still had an Iginla jersey from like 10 years ago until Gaudreau signed with us. I went out and bought his jersey right away. Gaudreau definitely sells more jerseys and merchandise.
