I have soft butter in a butter saver on the counter. I spread that #### evenly then add some garlic AND salt then place the bread butter side down. On the inside I use any cheese I have but it's usually old white cheddar and mozza. I like the cheese to ooze out the side and caramelize.

Butter in the pan is okay, but I think butter on the bread is way better to ensure butter distribution depending on the pan size, pan warpedness, etc. If you only have cold butter from the fridge, then that is your only option short of nuking the butter for a few seconds first.
Also, pretty much any cheese and capocollo.

I used to work at Diner Deluxe back in the day and our grilled cheese had cheddar, gouda and oka cheese on sourdough bread. Was a beauty. I don't think it's the same now that the place has changed owners but I could be wrong about that.

Has anyone else made the lazy man grilled cheese? Toast two pieces of bread in toaster, put cheese slice between toast when done then microwave for 10-15 seconds. Not as good as cooking in a pan but much quicker, especially if you're in a rush

My old roommate used to make those, because he is laaaaaazy. As I told him, that is NOT a grilled cheese. There is nothing grilled about it. It is an imposter.

Ha. My wife does that for our 3 year old because kids don't appreciate the time it takes for a proper grilled cheese.

Sometimes I grill one side of a piece of bread in butter.
Then I take the bread and put it in a toaster oven ungrilled side up with the cheese on top (real cheese for this sandwhich). You get a grilled cheese sandwhich with the benefit of baked cheese on top. You can eat it closed or open faced.
But yeah, without the actual grilling, it's not a grilled cheese. Although there have been times when the bread begins to burn prior to full cheese melting, so I'll have to use the microwave shortly. Even that f-es with the cheese. Causes it to melt into the bread as opposed to being its own layer of melted cheese.

I grill the sandwich normally in butter, then bake it in the oven for a few minutes. Makes the cheese extra melty.

I ate this for lunch nearly 4 days a week for 3-4 weeks one summer. I was lazy, it was cheap. I had a BBQ.
- Sliced bread (B)
- Butter slice (2x2 inches, just straight down that block of butter) on the inside of each slice of bread) (b)
- Kraft "cheese" x2 (c)
- Ham (H)
- Couple shakes of garlic salt
(BbcHcbB)
Thrown on a BBQ. Never came out soggy, but the inside did like oozing out at times. Too poor for tomato soup, so ketchup sufficed.
This leaves a lot of crap such as cheese and butter melt on a BBQ. But IMO, it was worth it.

I had it a couple times during its brief run in Mission. It didn't last long for a reason. That reason being it was not very good. The sandwiches, despite being grilled cheeses, were too fancy. Eight kinds of cheese and marinara sauce isn't a grilled cheese. And $2.50 for a handful of hickory sticks in a wax paper envelope was a real con.
I see they are opening up in Bridgeland. Hopefully they learned something.

My grilled cheese tip is to grate parmesan cheese on the outside of the bread and quickly fry it. Both sides, obviously.
So then you get melty cheese in-between parmesan cheesy bread.

I want to give a shout out to the Grilled Cheese gal in the Saddledome. Gave my little guy a complimentary grilled cheese (still not sure why, but thanks!). It was just a basic version, the way it should be.

My understanding was that it was always a pop-up location where they'd be in and out in a month or so, which is what happened. I thought their sandwiches were very good, the whole point of a grilled-cheese specific menu is to have different kinds of cheeses. Otherwise I could just have the $5 grilled cheese at the Western coffee shop.
