Have you not heard of beer cheese? Plenty of history of beer and cheese going well together.

I'm putting together a mini Belgian beer tasting for my wedding party and cracking my last Westy 12s.
Opinions on beer selection and order would be appreciated from the CP beer brain trust!
For order I am thinking:
-Delirium Tremens
-Westmalle Tripel
-Chimay Bleu
-St. Bernardus Abt 12
-Rochefort Trappistes 10
-Westy 12
I will shed a tear for sure, but at least I will be in Belgium in Sept to drink more Westvleteren 12.

Put the Chimay Red in before the Blue. It's such a different beer it's interesting to drink them back to back. I still can't decide which I like more.

Don't leave out Gouden Carolus or McChouffe imo if you have room.

Duchesse De Bourgogne is another one, it is very, very different than the rest if you want something unique.

My one comment would be that is a little bit of a quad overload and would suggest maybe eliminating a couple of the quads and throwing in a dubbel, wit, or saison at the start. Easy enough to do a tasting that covers every Belgian style from lowest ABV to highest. Just my thoughts.

There is no such thing.

They didn't. I found out I was celiac 5 years ago, so can't have it anymore. Along with any good beer.

Have you tried glutenberg? Or done any homebrewing. You can use other fermentables instead of barley and wheat.
I make a mead you would like. Gluten free (only fermentable is honey) and carbonated. 5-8%abv.
I'm hooked on New England IPAs right now so I have been brewing Double NEIPBraggots. I love the late addition aroma hops but every now and then I like a high IBU west coast IPA.
We have some amazing beer in this city now:
Best off the top of my head:
Blindman - NE Pale Ale (2nd place best of show Alberta beer awards) Super Session Ale
Outcast - Neon Nightmare, Wannabe, Last Minute Stout, Forgetfull Brewer
Dandy - T2G-IPA, Bright Young Thinks, My Boy Lollipop, Jungle Bird
Wild Rose - High Harvest
Zero Issue - Nemesis
Origin - Anything they make is great but only available in the brewery. Also a malting house
Town Square - Megawatt
Grizzly Paw - Red IPA
Annex - Any NEIPA. Or any limited edition IPA
Banded Peak - Hazy IPA
Township 24 - Nitro Stout
Last Best - Tokyo Drift
Tool Shed - Pink Boots DIPA
If anyone is a Guiness fan the head brewer at Township 24 is a huge fan and made his stout with Guiness in mind. I think it's better than Guiness with the nitro they installed in the tap room.

Ya, Glutenburg is the best. I've made my own as well, and it is even better but with my garage project I didn't get to it this year, so I've been forced to pay the gluten free tax which gets pricey.
What is tough to make/find is an easy drinking lager or Pil session beer. Any one I buy or make you can have 2 or 3 but more than that starts to taste bad. I may try making a really light one this fall.

You could probably use rice to make a easy drinking lager or pilser but you will need cold temps to ferment it. A blond ale would be pretty simple and easy to ferment at room temp. A Hefeweizen yeast might be an interesting pick as well.

Ya, the last time I tried to make a lighter "lager" It ended up at 6.1%. It was delicious, but failed in my goal! I'll really have to pull back the fermentables. It's a bit of a delicate balance between the sorghum and rice but I've got a pretty good idea of how the behave now. Mostly need time. They really need 4ish months to mellow out, which is the biggest issue I have with the commercial stuff.

Nice. 6.1& isn't too bad. I bet it tasted better than most commercial lagers.
