I'd say it's far more likely flash dies completely than the iPad adopting it. The trend is moving away from flash, not towards it. Even Adobe seems to be focusing more on HTML 5 than pushing flash forward in the mobile sphere.

That's true, but it still kind of sucks for users like me right now, that's all. My Ipad was supposed to replace my laptop for internet surfing, and for the most part it has. It's just not perfect.

There are still sites that use Flash as the only option for video?

I've seen a few sites. Some general examples are if you go to car manufacturers websites and use the "Build" option sometimes they don't work. I'm not sure if it's because the tool is Flash or some other technology. I don't know much about these things but I'm assuming that at one point everyone will use HTML 5 which will make this Flash/Non-Flash issue a thing of the past.

Using Flash for a rich car-building experience in the browser is an appropriate use of Flash. Sure you could rebuild it in HTML5/JS but I wouldn't second-guess someone for choosing Adobe's mature tools for that instead of the moving target that is HTML5. I was referring specifically to video, which doesn't need Flash at all.
