because what if they get even better... then you sign them for that cheap amount and have them for that price for even longer when they're at their best

That is the risk for sure. However, they can also get worse. Sophmore slumps are not unusual.
For instance Max Domi would have a better rating after his rookie season than after his second season.
I could see Willie Nylander having a worst season - which is why I'm going to sign him now.
Guys like McDavid probably improve more but are already highly rated - so the marginal improvement is minimal.

Yea I am certainly still in the old school mindset of rookies taking awhile to get a playable rating and have to keep reminding myself the rating weight has changed.
