At this point I'm really behind on the MCU and I'm kind of scared to try and catch up haha. The only movie I think I've seen post Endgame is Spiderman and Guardians.

There's not a whole lot to catch up on in the MCU, which is kind of their problem. They have spent a lot of time sine Endgame developing characters that no one seems to care about. You can probably just watch the first season of Loki to see all the progress that's been made. Even then, maybe you don't have to, as they might be retconning Kang out anyways.
I'm definitely am loving X-men 97. I don't know if I'd call it the best adaption. The live stuff had some amazing entries, just also some horrendous ones too.

These are all top notch superhero films. I was looking through the total list of X-men films and totally forgot that they'd even made "Dark Phoenix". I literally remember nothing of this movie.
Although to be fair to that film, it sounds like production got cut off partway through, after Disney acquired the X-men rights, and what was supposed to be the setup to a grand 3 film story, was truncated into a single boring film, so that the studio could recover some costs.
