Schindler's List is an absolute must watch for anyone who has not seen it. I personally did not see it until about 5 or 6 years ago and I immediately regretted not seeing it before then. Hit's you hard right in the head and heart.

Departed has A-list talent across the board and one of the best directors of this era. It's a fantastic film.

I like the ending of the Watchmen movie better than the book, that doesn't make the whole thing better.
The Departed is an awesome movie. Has a great soundtrack too.
I've never seen Infernal Affairs, but even if it's equally good or better than the Departed, the Departed is still great.

The ones that I deleted are great films, but honestly there's no rush to tick them off the list. Not a judgement on their quality. I've seen almost all of the films on your list, and it was intimidating for me, so I thought I'd get you started.
Bolded the ones you should get on right away. They are an easy watch, and other than the length of Arabia, have extremely high re-watchability factor as well.

Awesome, that's much appreciated. I watched most of these in my youth or in school/film classses, etc. when there was a lot more time in the world to actually watch things.

To be fair, I didn't like the original that much either. I thought it was overrated. The setup is just a little too implausible and it's not the type of movie I enjoy.
Scorsese's other films however, have always been excellent as they are more character studies or narratives than the artificial plot device in the cop/undercover cop face off/twist type of thing. The original was more of an exercise in period of cliched "tragedy" movies that were en vogue in Hong Kong at the time where the good guys lose/die and there's no redemption or emotional win.

Seven Samurai would be the first to watch on this list for me. Still my 2nd favorite movie of all time.
Almost every classic/modern western is either a remake or derivative of Kurosawa's samurai movies. This one in particular inspired The Magnificent Seven. There's many, many other examples of Kurosawa inspired American films, starting with Star Wars.
It might not be as exciting as The Godfather II (it's more exciting for my money), but if you're truly a fan of film it's good to see the films that inspired much of the modern cinema you enjoy.

The crappy part about movies like The Usual Suspects, is that the ending is almost common knowledge in our culture. I've never seen it, and I know I would love it just based on the story and the talent involved, but I know how it ends, so it kind of takes it down a peg.
I have the same problem with 2001: A Space Odyssey.

I lucked out on Seven Samurai and The Magnificent Seven. Didn't realize that they were connected and actually PVRd both of them. Learned about the connection and was then able to watch them each for the first time back to back.

but I might be biased as I find the Spaghetti westerns to be overrated

Just had to share:
After talking about Seven Samurai earlier, I found a copy of the Criterion Edition for 50% off. As anyone knows, Criterions are incredibly expensive, so it was quite the bargain.

If anything knowing where 2001 ends would help you enjoy the film.
You could enjoy and appreciate it more rather than go what the frack during the final act.
