I don't know if there's a limit to the number of audio tracks you can add but I've seen rips with 8 or more (language tracks usually) so that's not an issue.
Whether you should depends on your equipment and how much extra storage you're willing to use. I wouldn't add a 2.1 track unless you know you have a device that doesn't play (or transcode) 5.1. As I said VLC will convert 5.1 to stereo for you so it's a non-issue on tablets.
If you have a fairly new receiver it should play 7.1 tracks as 5.1. If not, Plex might transcode the audio but this is only an issue if your server isn't powerful enough. I would test your setup and see if it works.
