Not sure if it's just a Chinese thing, but raw egg is a non-issue for me. We sometimes crack a raw egg straight up into our rice and just mix'er up. Gives the rice a bit of smoothness and texture. Or when we hot pot, we regularly use raw egg and soy sauce as our dipping sauce.
