Go into Varadero town for dinner and then go to the Beatles club for a great rock show... Which is mostly non beatles music. Great time, cheap beer. For a few bucks more than a standard bus tour, you can ask the maitre D to get you a personal trip to Havana.. You'll see more, see what you want and won't get pestered by locals wanting money.
When in Havana go to The Hotel Ambos Mundo where Ernest Hemingway lived.
